Pork and Tomato Curry Casserole

Here is a super-easy casserole that requires no cooking time, just some mixing and then popping it into your microwave; salvation! The best part? You get all sorts of vegetables with tons of flavour and without overspending.

Ingredients

  • 100 g Sliced pork
  • ½ Brown onion
  • 1 Eggplant
  • 1 tin Diced tomato (around 400g)
  • 300 ml Water
  • 2 tbsp Sugar
  • 1 tbsp Corn flour
  • 1 tbsp Stock Powder (Any stock, vegetable, chicken, beef)
  • 1 tbsp Curry powder
  • 4 slice Cheese
  • 10 g Unsalted Butter

Instructions
 

  • Ingredients overview
  • Put all ingredients, except cheese and butter into a microwave safe dish and stir well. Place cling wrap loosely, then microwave (600w) for 10 mins.
    800W > 7mins 30secs
    1000W > 6mins
    100 g Sliced pork, ½ Brown onion, 1 Eggplant, 1 tin Diced tomato, 300 ml Water, 2 tbsp Sugar, 1 tbsp Corn flour, 1 tbsp Stock Powder, 1 tbsp Curry powder
  • Add cheese and butter then stir well again. Place cling wrap loosely, then microwave (600w) for 2 mins.
    800W > 1min 30secs
    1000W > 1min 10secs
    4 slice Cheese, 10 g Unsalted Butter
  • Stir well again before serving
