Light and Fluffy Prawn Asparagus Omelette

This recipe is perfect for those days when it's cold outside and all we want to do is cook up some bacon or heat leftovers from last night’s dinner party. Everything old is new again - this time through technology instead of tradition.

Ingredients

  • 3 Asparagus
  • 1 Prawn (Defrost in a cold water first if it is frozen)
  • 2 Egg

For Prawns

  • 2 tsp Cooking sake
  • 2 tsp Corn flour
  • Salt

For egg mixture

  • 2 tbsp Mayonnaise
  • 1 tbsp Water
  • 2 tsp Mirin

Prawns

  • Put prawns into a microwave safe bowl then add cooking sake, corn flour and salt. Mix well
    1 Prawn, 2 tsp Cooking sake, 2 tsp Corn flour, Salt
  • Place cling wrap over loosely. Cook in a microwave at 600W for 1min
    800W > 45secs
    1000W > 35secs

Egg mixture

  • Prepare another microwave safe bowl and put eggs, mayonnaise, water and mirin. Mix very well until they become smooth
    3 Asparagus, 2 Egg, 2 tbsp Mayonnaise, 1 tbsp Water, 2 tsp Mirin
  • Place cling wrap over loosely. Cook in a microwave at 600W for 1min 30secs
    800W > 1mins 5secs
    1000W > 55secs
  • =CAUTION - Glassware is very hot=
    Take the bowl out of the microwave. Mix gently by spatula. Put the wrap back on loosely and put back into the microwave at 600W for 30secs. Keep repeating this process until the Egg mixture becomes half-cooked (usually 3 rounds would do nicely)
    800W > 22secs
    1000W > 18secs
  • =CAUTION - Glassware is very hot=
    Once the egg is cooked, add the prawns to the bowl and mix gently. Serve while warm.
